Katrina Markoff makes millions
selling, well, progressive
chocolate. A typical box of Vosges
Haut-Chocolat – the tony name
of Markoff’s brand – can include
ingredients as exotic as Japanese
wasabi, Indian curry powder,
Italian taleggio cheese, yam, and,
yes, even bacon. In a word, it’s like
expensive modern art.

Since Markoff opened her fi rst
chocolate shop in 1998, there
has been no looking back. From
a single store, where she and a
partner staffed the counter, to
an enterprise whose revenues
in 2006 almost touched $7
million, with stores in Chicago,
New York and Las Vegas, plus a
catalogue and online business,
Markoff may now be viewed as a
chocolatière de fortune. |

The path to fortune led her
here and there. Currently in
her early thirties, Markoff is a
graduate of Vanderbilt University.
She has degrees in Psychology
and Chemistry. Three days
after graduation she headed for
Paris and studied for a year at Le
Cordon Bleu. She graduated with
Grand Diplômes in Cuisine and
Pâtisserie as well as degrees in
Basic and Advanced Oenology. |
